Serves 6
Make filling: 2 tsp of olive oil in a large non stick pan over medium heat. Add 8 ounch package of sliced mushrooms, 1 chopped onion, 1 chopped red bell pepper. Cook and stir, until softened. Add 1 bag of meatless crumbles (12 ounces) and cook, stirring until browned. After 5 mins, add fire roasted tomatoes, 1/2 cup of low sodium vegetable broth, 1 tsp of cinnamon, 1/2 tsp of allspice and 1/2 tsp of salt. Bring to a boil, then reduce heat to simmer, covered. Stir until thickens a bit (about 15 minutes)....
