Tick, tock… the countdown to brew in the new year begins!

Earlier this year, CBTL launched their line of single serve coffee and tea machines! There are 3 styles to choose from: the Americano, Contata or Kaldi. Single serve machines have come a long way in the last several years. I would love to try this machine, so I am excited to hear how well the machine works.

For myself, I would pick the red Americano. It has a 51 ounce water tank which is the largest. All of the machines make espresso, coffee and tea <3 Which CBTL recipe would you try first?

Rice Flour Banana Bread

I am finally getting around to using some rice flour I purchased from Amazon a few months ago. I found this recipe and it turned out yummy!

: Delicious, wheat free alternative

 Ingredients

  1. 1/3 cup softened butter
  2. 2/3 cup sugar
  3. 2 eggs
  4. 3 tablespoons buttermilk
  5. 1 teaspoon lemon extract
  6. 2 cups brown rice flour or 2 cups rice flour
  7. 1 teaspoon baking powder
  8. 1/2 teaspoon baking soda
  9. 1/2 teaspoon salt
  10. 1 cup mashed ripe bananas
  11. 1 cup toasted coconut

 Directions

  1. Preheat the oven to 350°F.
  2. In a large bowl, beat the butter and sugar until creamy.
  3. Beat in eggs, one at a time.
  4. Stir in buttermilk and lemon extract and mix well.
  5. Combine rice flour, baking powder, baking soda and salt and add to the butter mixture.
  6. Stir in bananas and coconut and mix well.
  7. Spoon the mixture into two greased mini loaf pans (5 1/2 by 3 inches).
  8. Bake 50 to 55 minutes, or until a wooden pick inserted into the center of the bread comes out clean.
  9. Cool in pans 2 minutes, then turn out and cool completely.

Preparation time: 10 minute(s)

Cooking time: 1 hour(s)

Number of servings (yield): 10

Calories: 307.4, Fat: 13.5

As a side note, I left out the toasted coconut, lemon extract and it still turned out great. Also, I cooked mine for approximately 50 mins.

Citrus smoothie

I have this problem every year. Bags and bags of oranges from our trees I simply cannot eat quickly enough. I know, a good problem to have. Oranges are one of my favs, so I love just peeling and eating them as a snack.

We have two citrus trees in the yard and we end up donating so much of them every year. Until this past month. I found this yummy, easy drink mix on allrecipes site. Tastes just like an orange julius – so
refreshing!

I’ve experimented a bit and added a kiwi and use 2 fresh oranges from the tree. Plus, I think skim milk or soy would be fine instead of whole milk?

The kids love it (well until they get tired of it). Thankfully, we have maybe 1 bag left to pick!

Orange Smoothie

2 oranges
1 cup milk
1 cup water
1 teaspoon vanilla extract
1/3 cup white sugar (or substitute)
10 cubes ice

  1. In a blender, combine orange juice concentrate, milk, water, vanilla, sugar and ice. Blend until smooth. Pour into glasses and serve.

Colorful cinnamon rolls

Cinnamon Roll King Cake


Tools needed: spoon, apron

Ingredients:

One can of cinnamon rolls that include icing
Food coloring

Instructions:
Pull apart cinnamon rolls and straighten them out. Twist each strand several times to give it shape.

Now start to layout your cake. Start with the center piece, first. Wrap the strand from the center to make the start of your ‘cinnamon roll’. Continue by adding, another piece to the end of your first and so on. Continue until have used all your strands.

Follow instructions on cinnamon roll package to figure cooking time.

This recipe requires cooking on the stove or in the oven. Practice safety around open flame and always use an oven mitt when removing something from the oven. While cinnamon rolls are baking prep your colored glazes.

Take your glaze and seperate in to several small containers.

In each container add a 2-3 drops of your desired colors. The brighter the better for Mardi Gras (Purple, Yellow, Green are traditional colors of the holiday).

When they are finished cooking, start by adding one of your glaze colors. Continue with the rest until you have finsihed your glazes.

Sprinkles or other sugar garnishments can be added to make it more festive!

Prep time: 15-20 mins
Serves: 3-4

Chai tea from scratch

I went ahead and made chai at home for the first time — I had some left over ginger and cardamon seeds I wanted to use, so what the heck. It came out really good. I swapped out the honey and used sweetened milk. Yum!

Chai tea (4 servings)

  • 10 whole green cardamon pods lightly crushed
  • 5 whole cloves
  • 2 cinnamon sticks
  • 1 piece fresh ginger (about 2 inches) peeled and quartered
  • 1/2 vanilla bean split lengthwise and scraped
  • 1/3 cup honey plus more for serving (optional)
  • 4 bags black tea
  • 1 1/2 cups milk
  1. Place 3 cups water in a small saucepan; add cardamom, cloves, cinnamon, ginger, and vanilla bean and scrapings. Bring to a boil over high heat. Reduce heat to low; simmer until mixture is aromatic, about 15 minutes. Whisk in honey; drop tea bags in pan. Turn off heat, and let steep 3 minutes.
  2. Strain tea through a fine strainer or a coffee filter into a warmed serving pot. Heat milk in same saucepan over medium-high heat, about 3 minutes. Do not let milk come to a boil because it will separate. Pour into serving pot with the tea, and stir well to combine. Serve immediately, with more honey on the side if desired.
