Rice Flour Banana Bread
I am finally getting around to using some rice flour I purchased from Amazon a few months ago. I found this recipe and it turned out yummy!

This may appear to be a mistake. But trust me it’s not.
It was definitely made with purpose.
A pic of my version with chocolate covered graham crackers.

Tools needed: spoon, apron
Ingredients:
One can of cinnamon rolls that include icing
Food coloring
Instructions:
Pull apart cinnamon rolls and straighten them out. Twist each strand several times to give it shape.
Now start to layout your cake. Start with the center piece, first. Wrap the strand from the center to make the start of your ‘cinnamon roll’. Continue by adding, another piece to the end of your first and so on. Continue until have used all your strands.
Follow instructions on cinnamon roll package to figure cooking time.
While cinnamon rolls are baking prep your colored glazes.
Take your glaze and seperate in to several small containers.
In each container add a 2-3 drops of your desired colors. The brighter the better for Mardi Gras (Purple, Yellow, Green are traditional colors of the holiday).
When they are finished cooking, start by adding one of your glaze colors. Continue with the rest until you have finsihed your glazes.
Sprinkles or other sugar garnishments can be added to make it more festive!
Prep time: 15-20 mins

Oh, this makes my mouth water each time. Bulgogi, rice, seaweed, red bean paste, kim chi… hot!
Oh and black bean noodles too.
Some days I am super inspired to tackle a new recipe and then others, not so much. I mean we all can’t be Moonstruck Mommy right : ) I’ll get there eventually!
With that said, I had to look up an easy naan recipe. Let’s see how this goes. Yumm, don’t forget the cucumber dip!

Farmers market was yummy as usual. There’s a vendor who sells delicious heritage tomatoes … so sweet, they taste like candy! The booth nearby was giving out samples of dip. Eggplant, cucumber and cilantro. Oh so good, had to look up a recipe. I’ve made hummus and cucumber dip before, so I knew I’d love it. Sometimes it is just those few subtle ingredients that give it a whole new life. Drool. Next I need to bake some naan.
Yogurt, Cucumber and Mint Dip
1 cup plain yogurt
2 Persian cucumbers, roughly chopped
½ tsp. Kosher salt
½ tsp. dried mind or 2 tsp. fresh mint
Pinch of dried, ground garlic
Mix all of the ingredients in a medium bowl and stir thoroughly. Serve with pita chips, sambosas or bolani.
OMG this looks scrumptious, Layered Afghan Eggplant... and the Spicy Chutney.
